Ingredients
- 1 cooked and shredded chicken breast
- 1 grated carrot
- 1 can of sweet corn
- 1 can of green peas
- 1 chopped green apple
- 3.5 oz of raisins
- 1 cup of mayonnaise
- Salt and pepper to taste
Instructions
- In a large bowl, mix the shredded chicken, grated carrot, sweet corn, green peas, chopped green apple and raisins.
- Add the mayonnaise and mix well.
- Season with salt and pepper to taste.
- Refrigerate for at least 1 hour before serving.
Notes
- Add some crunch: To add some extra texture to the salad, you could try adding some chopped nuts or seeds. For example, sliced almonds or sunflower seeds would add a nice crunch.
- Spice it up: If you like a bit of heat in your food, try adding some diced jalapeño peppers or a dash of hot sauce to the salad.
- Make it creamy: For a creamier texture, you could try replacing some of the mayonnaise with Greek yogurt or sour cream.
- Add some greens: To make the salad even more nutritious, try adding some chopped leafy greens such as spinach or kale.
- Make it fruity: For a sweeter taste and extra burst of flavor, try adding some diced fresh fruit such as pineapple or mango.
- Serve it differently: Instead of serving the salad on its own, try serving it in lettuce cups or on top of a bed of mixed greens for a more filling and satisfying meal.
